How to change file type associations?

Guys,

is there an easy way to change the target for PDF-files from xpdf to Acrobat reader?
In /usr/lib/filetypes there are a lot of large config files but I didn´t found a way to do that - apart from the few file type associations that can be changed via the control panel on the desktop.
